And the best pairing was????
Wow. Tough tough tough to nail down my favorite but I guess I'd have to say the Sturgeon over oxtail marmalade with the Tempranillo. Such a brilliant re-imagination of "surf & turf" to the point where that label never crossed my mind the entire time I was eating it. Plus the beautiful earthy spice notes in the wine played off the dish so well. Incredible!
